Kimberly Loves Her Coco-Cola Cake (recipe)

GAC

As a child, Kimberly from Little Big Town pretended she had a cooking show
and now she’s in her third season of Kimberly’s Simply Southern on GAC.
She says her favorite thing to make is Coca-Cola cake! When her life gets
too busy, she remembers her great-grandma who had 11 kids and walked
seven miles to and from work every day.

Kimberly’s Coca-Cola Cake
2 sticks unsalted butter
3 tablespoons cocoa
1 cup coca-cola
2 cups marshmallows, mini’s
2 cups cake flour (unsifted)

1/2 cup buttermilk
2 eggs, beaten
1 1/2 teaspoons baking soda
1 teaspoon vanilla
Chocolate Icing:
2 cups heavy cream
1/2 cup confectioners’ sugar
1/8 teaspoon salt
1 pound bittersweet chocolate, roughly chopped

In a small pot add butter, cocoa, cola and marshmallows. Melt and stir to incorporate.
