As a child, Kimberly from Little Big Town pretended she had a cooking show
and now she’s in her third season of Kimberly's Simply Southern on GAC.
She says her favorite thing to make is Coca-Cola cake! When her life gets
too busy, she remembers her great-grandma who had 11 kids and walked
seven miles to and from work every day.

Kimberly's Coca-Cola Cake
2 sticks unsalted butter
3 tablespoons cocoa
1 cup coca-cola
2 cups marshmallows, mini's
2 cups cake flour (unsifted)
2 cups sugar
1/2 cup buttermilk
2 eggs, beaten
1 1/2 teaspoons baking soda
1 teaspoon vanilla
Chocolate Icing:
2 cups heavy cream
1/2 cup confectioners' sugar
1/8 teaspoon salt
1 pound bittersweet chocolate, roughly chopped

Preheat oven to 325 degrees. Spray 9x13 pan with non-stick spray.
In a small pot add butter, cocoa, cola and marshmallows. Melt and stir to incorporate.
In a large mixing bowl add flour, sugar, buttermilk, eggs, baking soda and vanilla.
Whisk to stir. Slowly add the butter mixture and incorporate into the batter.
Pour batter mixture into a 9x13 pan. Place in oven and bake at 325 degrees for 45-55 minutes.

For the Chocolate Icing:

In a large saucepan, bring 2 cups heavy cream, 1/2 cup confectioners' sugar,
and 1/8 teaspoon salt to a boil. Remove from heat; add 1 pound bittersweet chocolate,
roughly chopped, and let stand, without stirring, for 1 minute.Whisk just until combined.
Refrigerate, stirring occasionally, until spreadable, about 1 hour or keep at room temperature.
