I've made lemon pasta numerous times, and it's a perfect compromise for me and my husband. He likes things spicy, and I'm more of a plain eater. I'm also of Italian extraction, so... pasta is a regular on our menu. I was searching for something to cook one day, and came up with a crazy idea! What if I spiced up pasta, and combined two of our two favorite things!? The recipe is simple...

 

1lb on dried penne, boiled until soft.

Grill 1 chicken cutlet, and cut it up when it's cooked.

When the noodles are done, add just enough of Hy-Vee's Select Light Lemon Ginger Sesame Vinaigrette (for a marinade over the cooked noodles).

Add a pinch of crushed red pepper.

Add previously cut chicken to pasta.

 

YOU'RE DONE.

Plus, that probably only took you a half or so to cook. Here's an idea of how it looks. You can change up the portions to make sure your family has enough. It's such an easy go-to recipe when I come home after being on the air!
