It just wouldn’t be the Minnesota State Fair without the amazing fair food and drinks, and while some staples are there every year, as the fair gets ready to open its 2026 run, there are several vendors you WON'T find on the midway this year.

The Minnesota State Fair is one of the largest and best-attended events in the country. (In fact, it was just ranked as the Best State Fair in the U.S. again this year.) Showcasing the North Star State’s finest agriculture, art, and industry, as its website says, 'the Great Minnesota Get-Together is 12 Days of Fun ending Labor Day!'

Our state fair has been a summer tradition here in the Land of 10,000 Lakes for almost as many years as Minnesota has been around. According to the official Minnesota State Fair website, the first Fair was held way back in 1859, just a year after Minnesota itself became a state.

Speaking of fun, here's a fun fact: Did you know the state fair used to be held in various cities around Minnesota? That's right: before the permanent location on the fairgrounds in Falcon Heights (midway between Minneapolis and St. Paul), it used to rotate locations, with various versions having been held in Rochester, Red Wing, Winona, Owatonna, Minneapolis, and St. Paul.

Minnesota State Fair 2026 Brings New Food and Farewell Favorites

This year's State Fair runs from Thursday, September 27th through Labor Day, September 7th, and will feature 9 new vendors debuting 36 new food offerings this year. But that also means that several vendors will be bidding adieu to the Fair this year and won't be making an appearance in 2026.

Minnesota State Fair Vendors That Have Disappeared in Recent Years

Of course, this isn't the first year that vendor won't be appearing at the Fair. In a story I wrote last year, the popular Nordic Waffles stand was officially MIA from the Fair in 2025 after debuting back in 2018. MomoDosa and the Indigenous Food Lab, plus Jammy Sammies by BRIM, Icee, and Smokin' Joe's Smokehouse were also absent from the Fair last year.

Keep scrolling, though, to see all the new foods that are making their State Fair debut here in 2026!
