I was talking with Tessa Leung, CEO of Grand Rounds Brewing Co. She was in the studio chair, ready to do the regular Saturday broadcast on KROC-AM 1340 and 96-9 FM and she had such an energy about her.

"Ok," I said before the mics were on, "what's going on. You have ants in your pants, so give...what's the deal?"

"When the show starts, I'll tell you!" Her dog, Cortado was excited, too. Running all over the building, then racing into the studio like, "Has she said it yet?" and then zoom! Out to run down sniffs, smells, and dark hallways.

TWO AMAZING ROCHESTER CHEFS ARE HEADING UNDERGROUND

The Underground at Grand Rounds is literally the basement, and it's been done up in a way that makes it cozy and fun, a little offbeat and a lot intimate. The space is Marrow, Rochester's hidden restaurant inside Grand Rounds. I've written about it before (HERE).

Well, this is all happening in that space. Here's what Tessa said,

Marrow...is welcoming two talented local chefs to its roster. Paul Berglund, formerly of the Bachelor Farmer in Minneapolis and currently of his own micro-restaurant, Fat Noodle, and Annie Balow, creator of the popular Rochester pop-up ThaiPop, will both begin cooking at Marrow in the coming weeks.

So Fat Noodle's Paul Berglund is all about the noodles, made fresh in house. He's also a James Beard Award Winning Chef and that's a pretty big deal. He'll begin his residency December 5th and will be open 5:30 – 8:30 pm with a three-course tasting menu for $40 on Thursday evenings, and a four-course tasting menu for $55 on Fridays and Saturdays..

Chef Balow will start residence at Marrow starting on December 16.  ThaiPop will operate on Mondays, Tuesdays and Wednesdays from 5:30-8:30 pm.  Balow is known for taking ancient Thai recipes and putting a modern spin on them.

Personally, I love this idea. So much amazing talent lives in Rochester....sometimes just for a couple years because of Mayo or other jobs. It's the ripples..
