And I was blown away to find out it was that story that brought Jordan and Christina Evenson closer to their dream of owning and running a business. Jordan saw it in the station newsletter, sent the link to Christina, and boom. They had their soft opening in May and the grand opening is on August 13th (Clara's birthday).

Although Jordan and Christina grew up in Austin, Minn., and were happily living there with their family and both working at Hormel in careers they enjoyed, the Lanesboro area had always been special to them.
Jordan’s great-grandmother Clara Evenson lived in Lanesboro until her death at age 102. The restaurant name pays homage to Clara.
Now, the menu. Pizza (the same pizza recipe as Loubelle's), paninis, sandwiches, soups, you know, the usj. And of course, ice cream (16 kinds of Chocolate Shoppe ice cream).
Then, for the kids...
The Glady Meal (named after Jordan’s Grandma Glady) is a choice of grilled cheese or PB/J. It comes with kettle chips and fruit or veggies.
And for the hikers, bikers, and drives...
- BUNNY PLATE - A selection of seasonal raw veggies.
- MONKEY PLATE: A selection of seasonal fresh fruit.
- PUPPY PLATE: A selection of meat and cheese.
They've even found a way to work in Spring Grove with the Spring Grove Float (choice of Spring Grove Soda with Dutch vanilla ice cream).
